This Chicken and Dirty Rice Casserole is the perfect dish for dinner. A Flavor-Filled Homemade Cajun Cuisine that will knock your socks off!

I love casseroles! There is something just so warm and comforting about it. This casserole is warm in a literal sense too.
It’s Cajun Flavors are sure to warm you right up.
My husband was in his glory and so were the kiddos and I, just with a tall, cold glass of milk to help us along. 😉
Oh, it tasted so good too!
Chicken is a universal meat that can be seasoned and cooked every which way and surprise you with excellence every time.
This meal portrays that well.
Items you’ll need…
For the rub:
- 1 tsp Garlic Salt
- 1/2 tsp Pepper
- 1/2 tsp Minced Onion
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Crushed Pepper Flakes
- 1 tsp Lemon Juice
- 1 Tbsp Olive Oil
For The Rest:
- 2 Boneless Skinless Chicken Breasts
- Package of Smoked Sausage
- 1 Small Onion
- 1 Green Pepper
- A tsp of Minced Garlic
- A smidge of Cayenne, about 1/8 tsp
- 1 cup Dry Long-Grain Rice
- 2 1/4 Cup of Chicken Broth

Preheat oven to 350°
In a decent sized bowl combine everything for your rub and mix together.
After cutting your chicken breasts in half, place them in the bowl and coat with rub. Go ahead and set that aside for now.
Slice your, smoked sausage and dice your Green Pepper and Onion.
Splash a frying pan with olive oil and heat over Med-High heat. Brown your smoked sausage and carefully transfer to a plate.
Carefully, place your chicken in the same pan (you made need to add a smidge more Olive Oil) and brown on both sides. Transfer the chicken to the same plate as your sausage.
Reduce your heat to a medium low temperature and add your diced green peppers and onion. Saute for about 3 minutes and add your minced garlic, cayenne and salt & pepper to taste. Cook for about 30 more seconds and add chicken broth and rice. Stir and bring that to a boil.
Carefully transfer contents to a casserole dish, add smoked sausage and stir, then place browned chicken on top.
Cover with foil and bake for 35 minutes.
Remove foil and cook for an additional 10 minutes.
Serve with a tall glass of milk and enjoy your Chicken and Dirty Rice Casserole!
