Anyone who’s close to me knows I am not a fan of Mexican food. Lord knows I wish I was! It seems like every other soul on this planet could eat it daily, more specifically, my family. 😉
Regardless of whether I’m a fan, I still search for it every once in a while because my husband loves it. If I find something of interest, I’ll switch things in and out until (hopefully) I come up with something I’ll like.
I really lucked out (Thank You!) when I found a Chicken Fajita Pasta from Kevin and Amanda.
It was a complete hit! I mean, I frickin’ loved it! It is the very first Mexican dish that I can honestly say I loved and want to eat again.
I even went to work the next day and passed the recipe out to my co-workers. I also wished I hadn’t given all the leftovers to my husband because I could not stop thinking about that meal. lol
I’ve decided I will continue to look for recipes outside of my comfort zone and hope I’ll eventually expand the likes of my taste buds. 😉
So how do you get this amazing One Pot Chicken Fajita Penne? I’ll tell you.
First, cut up your chicken into little bite size pieces. I got the thin chicken breasts and they worked perfectly. Season with about half of the Fajita Seasoning.
Heat your oil in a deep frying pan on medium high heat. Gently, slide your chicken in and be careful because she’s gonna splash. Brown that well and remove to a plate.
While your chicken is browning, slice up your veggies and add remaining Fajita Seasoning to them.
Once chicken is removed to the plate add a bit more oil and brown your veggies. When your vegetables are soft add your garlic and cook for about 30 seconds.
Remove veggies to the same plate as your chicken.
Now, you’ll add the chicken broth, Rotel, Cream Cheese and Penne pasta the that same pan with all the awesome flavors cooked onto it.
Bring this to a boil; reduce heat to low and cover. Simmer for about 10-15 minutes.
Add your cooked chicken and vegetables to the Penne and mix well.
Stir and heat for about 3-5 minutes.
That’s it guys! I can’t recommend this recipe enough. It is absolutely delicious.
