There has been some strange weather here in Pennsylvania this past month. For instance, yesterday was a lovely 60 degrees yet today we’re at a bitter 15 degrees. It’s funny what kind of effect that has on an appetite. Yesterday I was wanting to grill for dinner and today I’m craving some warm, hearty comfort food. Nothing satisfies that quite like this Beef Stew. I remember the dish as a child. My grandmother would make it on cold winter days to warm me up after playing outside all day. Its amazing how easy it is too. Grab a packet of Beef Stew Seasoning (I use McCormick) and package of baby carrots, brown some beef, cut some potatoes and a small onion and your set. Another thing I like about it is you can do it either on the stove top or in a crock pot. Today I’ll be doing it on the stove top as I had to run out for the ingredients earlier in the day but if you already have them, it’s wonderful for the crock pot. Simply add all ingredients, set it on low for 6-8 hours and forget about it. This dish can either be served by itself or on a bed of buttered egg noodles lightly salted and peppered.
