After the tragic and sudden passing of my dear Mother-In-Law, these past few weeks, I’ve been taking my cooking outside the house and cooking for my Father-In-Law. I know he likes things with a little kick so I thought I’d experiment with some Cajun Cuisine.
Boy, am I glad I did!
This Easy Cajun Chicken was so incredibly delicious, I can’t even wait to make it again. The chicken was tender, juicy and packed with flavor in every bite but the fettuccine is where the kick came from thanks to my old friend, Rotel. I have to note though, that it wasn’t too much for my kiddos who are 3 and 6!
To get started you’ll need the following:
- 1 Box Fettuccine
- 2 Chicken Breast
- 2 Tbsp Olive Oil, EV
- 2 tbsp Cajun Seasoning
- 1 tsp pepper
- 2 tsp Garlic, Minced
- 1 Red Pepper
- 1 Green Pepper
- 1 Onion
- 1 10 oz. can Rotel – Original Diced Tomatoes and Green Chilies
- Small container Heavy Cream (about 1 cup)
Easy Cajun Chicken Prep
We start by slicing our chicken long way down the center to make them thinner. After that, we cut them in half so we end up with 4 pieces of chicken.
Use 1 1/2 TBSP of our Cajun Seasoning on all sides of our chicken and 1/2 tsp of pepper.
-Pre Heat Oil in Frying Pan on Medium High Heat – We want the oil hot to get that blackened look on our chicken.
Now, we slice and dice our veggies and coat with the remaining Cajun Seasoning and pepper.
Nonstick Deep Frying Pan – The frying pan pictured did the job but man, I wished I’d taken my jumbo one from home.
Food Tongs – That oil certainly gets splashing, food tongs save our hands from getting burned.
Cutting Knives – I can’t stress enough how important good quality cutting knives are in a kitchen. I know it seems counter intuitive but the sharper the knife the less likely we are to cut ourselves!
Time to Cook
Boil some water and cook Fettuccine according to package directions.
In preheated frying pan, carefully place chicken in the oil. Cook on each side 3-5 minutes or until cooked through.
Remove to plate.
Add Veggies and minced garlic, cook until tender.
Turn heat to medium low and add cooked fettuccine noodles, Heavy Cream and Rotel. Cook about 5 minutes, turn heat to low and top with chicken. Cook about 5 more minutes and serve.
